Recipe: Aloo Jeera


One of the staples in our house is Aloo Jeera - because we are all potato addicts! This is actually the first Indian dish that I learned how to make (after my chai, of course!) It goes well with rice and raita, or you can eat it with chapati. It is a very simple recipe that only has a few ingredients.


Madh Mama's Aloo Jeera
Serves 3 people (and a baby!)


Ingredients:
- 3 medium/large potatoes
- 1/2 red onion
- 1 tsp salt
- 1 tbsp ginger/garlic paste (can be purchased at Indian grocer in the refrigerator section)
- 6 tbsp oil (either vegetable, sunflower or peanut oil works well)
- 1  tbsp jeera (cumin)
- 1/2 tsp turmeric
- 1/2 tsp chilli powder 


Tools:
- medium saute pan
-potato peeler


Directions:


1. Chop onions and keep aside


2. Chop potatoes and keep aside.

3. Heat up the pan on medium heat and pour 3 tbsp oil.


4. After a minute or so, put 1 tbsp jeera in the pan.


5. After a minute, the jeera should start to sizzle and begin to turn brown.


6. Throw in the chopped onions and toss.


7. After 2 minutes, put in 1 tbsp ginger/garlic paste and toss.


8. The onions will take about 5 minutes or so to cook. Make sure that they are nearly see-through and browned a bit on the edges.

9. Pour this mixture out of the pan and set aside.

10. In the same pan, heat up 3 tbsp oil and pour in the chopped potatoes and toss.


11. Put the lid on the pan and leave it for 3 minutes. This will speed up the cooking process.


12. Take the lid off and toss. You don't want to toss the potatoes too much because they will get mushy. So once every few minutes is sufficient.

13. It should take about 10+ minutes for the potatoes to be cooked. You will know it is cooked when you stick a fork through it and the potato would fall apart.

14. Then, add 1 tsp salt & 1/2 tsp turmeric and toss. Leave it for a minute.


15. Add the onion mix and 1/2 tsp chilli powder and toss. Leave it for 2 minutes and then take it off the heat and put the lid on.


And VOILA!

  1. I made this the other night minus garlic and minus chilli for the kids. It tasted fantastic. All three of my kids ate it including my 18 months old. My Indian hubby loved it. It is such as easy recipe. Thanks
